This is our first spirit from the Swan Valley Distilling Company and represents our interpretation of Mediterranean Grappa with a Swan Valley twist.
Starting with Grenache skins that were left over from production of port in 2019 we soaked them in rainwater and sugar to re-start the ferment.
After a week we had our fermented grape juice and pressed the skins again to extract as much of the liquid as possible.
Following settling we fermented the juice in four batches, with two of the batches we added Kaffir limes, grown in the Swan Valley, to the botanical chamber and then chose the best “cuts”.
The final spirit was diluted with Darling Range spring water to a concentration of 45% alcohol.
